Classic Christmas spices of nutmeg, cloves and mace wound with rich berry fruit and plum. Hints of leather and charcuterie. A well integrated and balanced wine with excellent dark colour and good length.

Try this with a slow-cooked osso bucco stew,or oxtail for the adventurous. Excellent with a classic lamb roast or a juicy T-bone with a mushroom sauce. The wine will complement a roasted salmon or white meats like pork and chicken.
After an annus horribilis in 2014, 2015 was a much kinder season. We prayed to the weather gods as a frost prevention measure and for once it worked. We had an exceptionally dry growing season. A heat spike in mid-February brought on vintage in the neighbouring McLaren Vale but we had over another month to slowly ripen the Shiraz. Cool nights (down to 4 degrees at times) and warm days in the mid-20s throughout March gave the fruit time to develop and balance the phenolics and flavour compounds with the sugar. We hand picked 3.5 tonnes on the 20th March.
The wine was made with minimal intervention. Grapes were destemmed and passed over a sorting table before being fermented largely whole. The wine was left on skins post ferment before pressing and Malolactic fermentation (MLF). Post MLF the wine was racked into barrels; 1/3 new French oak and the balance into older French oak. The wine was bottled after 18 months maturation and has had 6 months bottle aging prior to release.
