Food Matching

Beautiful with a roast chicken with stuffing and duck fat roast potatoes, or with natural oysters or any fish dish. My absolute perfect match is Chardonnay with a good carbonara with chunks of crispy bacon in a creamy egg sauce.

Viticulture

2016 was the year we decided to invest in a frost fan after a late killing frost on the 27th November destroyed the lower third of the vineyard. Luckily the Chardonnay was unaffected as it grows on a steep slope at the top of our property. It also compensated us by giving an excellent yield as our new double wrapped cane pruning paid dividends. We picked at night on the 29th February.

Winemaking

The fruit was destemmed and sorted before being lightly basket pressed into an open fermenter. Post ferment about 40% of the wine was matured in new French oak on lees for about 6 months with regular lees stirring. This portion was allowed to undergo Malolactic fermentation (MLF). The balance was kept in tank and did not undergo MLF. Post blending the wine was allowed to mature further in tank before bottling in late 2019. The wine is drinking beautifully now but should also cellar well.
